Start by cutting the potatoes in half then in half again, set them aside.
Into a bowl, add the mayonnaise, the tomato paste, the squeezed lemon, the grated red onion, the salt, and the chimichurri. Mix it all together very well until combined. Once that's done, set aside.
Into a larger bowl, add all chopped potato wedges and pour all the sauce we made over them, mix it all well.
Into a baking tin, add a drizzle of olive oil or oil, evenly spread it.
Then add all the potatoes, spreading them out evenly.
Add the sausages and cover the baking tin with aluminum foil.
Bake in a preheated oven at 180°C (356°F) for about 30 minutes. After this indicated time, remove the foil, and let it bake for another 30 minutes or until brown.
Add parsley to taste and help yourself.
