Onion and Tomato Omelet

Start by cutting the onion into round slices, next, cut the tomato in half then into half-moon slices.Now, in a bowl, add the eggs, the parsley, the salt and the black pepper, mix all the ingredients together very well.In a large skillet, arrange all the half-moon tomato slices around the edges, just like shown in the video.Then place the onion slices in the center.Add one drizzle of olive oil all over the ingredients, sprinkle one pinch of salt, one pinch of black pepper, turn on the heat at medium-low power and let it all fry for 3 minutes.After this indicated time, flip the onion slices, pour in the egg mixture, cover the skillet and let it all fry for 5 minutes.Remove from the skillet and finish with parsley to taste.Serve.
