Start by breaking up the pasta – place it on a dish towel, roll it tightly and break it into smaller pieces.
In a large skillet over medium to low heat, add a drizzle of olive oil.
Add the pasta we broke, the water and cook for 5 minutes.
In a medium bowl, add the eggs, the salt, a pinch of black pepper, whisk everything very well until combined and set aside.
Once the pasta has cooked through, mix everything very well and add the grated smoked sausage.
Then, add the grated cheddar cheese, the grated mozzarella cheese, the eggs we prepared and mix everything together very well once more to combine.
Cover the skillet and cook over low heat for 10 minutes.
After this time has passed, turn the pasta over with a plate.
Add the tomato sliced into half-moons, +100g of mozzarella cheese also sliced into half-moons, alternating them.
Cover the skillet again and let everything cook for another 5 minutes on low heat.
Serve.
