Into a skillet, add the olive oil and pour the onion and garlic, sauté until golden. Add the water and mix. Add the sweet paprika, mix and add the previously cooked and shredded chicken and mix very well.
Transfer chicken to a bowl, add the grated carrots, the corn, the pitted olives and mix again.
Pour some olive oil and add salt if you wish. Add the mayonnaise and, with a spoon, mix well until very creamy.
Finally, add the potato sticks and mix well.
Serve.
