Sauce
In a bowl, add the crushed garlic cloves, the salt, the chili flakes, the chimichurri, the lime and orange juices, and mix all the ingredients together very well until combined.
Now, in a baking tin, add the piece of pork loin and using a knife, poke holes all over the surface of the meat.
Add all the seasoning mixture we made and spread it well.
Next, add the precooked potatoes, cut in half.
Add the bacon chopped into cubes.
Cover the baking tin with aluminum foil, take to a preheated oven at 200°C (400°F) and roast for 50 minutes.
After this indicated time, remove the foil and roast for another 25 minutes.
While roasting, in a tall glass, add the table cream, the mayonnaise, the dried basil, the salt, the garlic cloves, and using a hand blender, beat all the ingredients together until combined.
Once the loin has roasted through, remove from the oven and cut into thick strips.
Finally, drizzle the sauce we made all over the meat.
Serve.
