Start by cutting off the ends of the zucchinis and with a peeler, peel just a few slices of the skin - you don't have to peel it completely. Grate the zucchinis and transfer them to a bowl, add the salt, mix well and set aside for 15 minutes.
Grate the mozzarella cheese and set aside.
Chop the onion into dices and set aside.
Get the bowl with the zucchini, add enough water to cover them and gently rinse them, then drain the water. Squeeze the zucchini so that enough water comes out and set them aside in a dry bowl.
Into the bowl with the zucchinis, add the grated cheese, the onion, the eggs and the wheat flour, season with oregano, salt, sweet paprika and black pepper, mix well until combined.
Into a skillet over low heat, add the oil and spread it, then add a spoon full of the mixture we've made and flatten it into a round shape.
Fry for 2 to 3 minutes, then flip it and fry the other side for another 2 to 3 minutes as well.
Serve.
