Garnish
Grate the beets, transfer them to a bowl and set aside.
Meanwhile, boil 1 potato and 3 eggs.
Peel a cucumber. Cut off the ends then cut it in half, to make it is easier to peel.
Grate the cucumber as well and add it to the bowl with the beets.
Peel the potato and grate it too, add it to the beets.
Cut half an onion into strips, chop some chives to taste and also add them to the bowl with the beets.
Add salt, black pepper and olive oil and season very well, mix.
Add the eggs and serve.
