Start by thoroughly crushing 400g of corn starch biscuits. Transfer them to a bowl and set aside.
Mash the bananas very well into a mixture. We've used Cavendish bananas, but you can also use Chunkey bananas, that's up to you. Transfer this banana mixture to the bowl filled with the crushed biscuits and mix it all together very well into a smooth and uniform dough, using your hands to reach the right consistency.
Now just roll it!
Shape this dough into little balls, as if you were making truffles. Repeat this process until you've used up all the dough.
Coat the balls in grated coconut, take them to the fridge and let them chill for 1 hour.
Serve.
