Start by making holes in the breadcrumbs spread out on a plate using an egg as a marking guide.
Add one egg yolk to each of these holes and cover them with breadcrumbs.
Next, remove them from the plate with the help of a tablespoon.
Transfer them to a baking tray lined with non-stick parchment paper.
Place them in the freezer and let them chill for twenty minutes.
After this time has passed, in a medium bowl, add the wheat flour.
In another medium bowl, add the beaten eggs.
Now, in a third bowl, add the grated Parmesan cheese, the sweet paprika, the oregano, a pinch of black pepper and mix everything very well.
Next, bread the egg yolks we prepared by first dipping them in the beaten eggs, then coat them in wheat flour, dip them in the eggs again and finally coat them in the seasoned Parmesan cheese.
Repeat this process with the remaining egg yolks.
In a small pan over medium to low heat add the vegetable oil and let it heat up.
Add the egg yolks we have prepared and fry them until golden brown.
Serve.
