Into a saucepan, start by adding the sugar, and stir very well until it melts.
When it fully melts, add the lime zest, and mix again.
Now, add the ginger, the cinnamon sticks, and the lime juice, mix it all together very well until combined.
Then add the garlic cloves and the orange peel – I’ve used a Brazilian type of orange, but you can use any other type you like. Also add the small onion chopped into smaller pieces.
Finally, add the water and mix it all together very well.
Once you’ve done that, let it cook over low heat for 20 minutes, or until it thickens and forms a syrup.
After the indicated time, turn off the heat and let it cool down to room temperature.
Finally, transfer all the syrup to a clip-top lid jar.
Have some syrup if you need.
