2 Tablespoons of Oil
3 Tablespoons of Sugar
1 Teaspoon of Salt
1 Cup of Milk
1 Cup of Cornmeal
1 Tablespoon of Baking Powder
Put the egg in the bowl and mix it well.
Add the oil, the sugar and the salt, mix very well.
Gradually add the milk and the cornmeal, always mixing – make sure to do this process to avoid lumps in the batter.
Finally, add the baking powder and mix gently. Once you’ve done that, set batter aside.
Into a loaf tin, add a drizzle of olive oil and spread it out well all over the tin. I’m using a 24cm long x 9cm wide loaf tin.
Now, pour all the batter in the loaf tin.
Take to a preheated oven at 180°C (356°F) and let it bake for 30 minutes. Baking time may vary depending on the power of your oven.
