Stuffed Zucchini with Ground Beef

Cut off the ends of a zucchini, and with a fork, make scratches all over it.Then cut it into 3 equal sized pieces.Now, with a spoon, hollow out these sliced pieces. Repeat this process to all of them and set them aside in a bowl.Into another bowl, add the rice, the diced green bell pepper, the grated onion, the ground beef. Add parsley to taste, the tomato paste, and the oil.Season with salt, paprika and black pepper.Mix it all together very well until it all combines.Once you’ve done that, stuff the zucchini pieces with the mixture we’ve just made, then set aside.Then, into a saucepan, add the potatoes cut into slices, covering the whole bottom.Now place the stuffed zucchini pieces on top of these potato slices.Cover each zucchini piece with tomato slices.Finally, pour the tomato sauce all over it – to make it, just dissolve the tomato sauce in warm water.Close the saucepan, let it all cook for 45 minutes over low heat.After this indicated time, turn off the heat and help yourself.

  • 4 Medium Zucchinis
  • 1 Cup of Rice (200ml)
  • ½ Diced Green Bell Pepper 
  • 1 Grated Onion
  • 150g of Ground Beef
  • Parsley to Taste
  • 1 ½ Tablespoons of Tomato Paste
  • 60ml of Oil
  • 1 Teaspoon of Salt
  • ½ Teaspoon of Paprika
  • Generous Pinch of Black Pepper
  • 2 Medium Potatoes
  • 1 Tomato
  • 200g of Tomato Sauce
  • 100ml of Warm Water
