Start by cutting the sausages into round slices.
In a large skillet over medium to low heat, add a drizzle of olive oil.
Add the sausage slices and fry them until golden brown.
In a medium bowl, add the eggs, the cream cheese and parsley to taste.
Season with the salt and a pinch of black pepper.
Add the wheat flour and mix everything very well until combined.
Next, pour this mixture over the sausages in the skillet over low heat.
Add the tomato cut into smaller pieces and the shredded mozzarella cheese.
Cover the skillet and let everything fry for 5 minutes.
Serve.
