Vegetables and Seasoning
Start by cutting the thick slices of smoked pork or bacon into smaller pieces.
Into a saucepan, add the beans and the chopped bacon or pork, add the carrot chopped into smaller pieces, the salt and enough water to cover all the ingredients, cover the saucepan and let it all cook for 1 hour and 30 minutes.
After this indicated time, uncover the saucepan, remove the pieces of carrot and set them aside.
Also remove a scoop of the beans, without the broth, and set them aside in a bowl.
Also remove the pieces of pork or bacon.
Into a blender, add the pieces of carrot, the scoop of the beans, ½ cup of the bean broth, blend all the ingredients very well.
Now, into a saucepan, add a drizzle of oil, add the red onion chopped into dices, the minced garlic cloves and stir until slightly golden brown.
After that, add the red pepper, the chopped chives, the tomato chopped into small dices, the salt, the oregano and the black pepper, stir well and let it all cook for 4 minutes.
After this indicated time, add all the pork or bacon and stir.
Add all the beans and the broth we’ve made in the blender, the bay leaves, stir well, cover the saucepan and let it all cook for another 15 minutes.
Finally, add parsley to taste.
Serve.
