Start by making shallow cuts in the pork loin with the help of an oven rack.
Next, take a lid and attach the pieces of string to it.
Place the meat we prepared and make some ties over this meat.
In a large pot, add the water and bring it to a boil.
Add the salt, the black peppercorns and the bay leaves.
Cover the pot with the meat secured underneath the lid and let it cook for 3 minutes.
After this time has passed, remove the meat and transfer it to a cutting board.
Fill the cuts we made with the onion sliced into half-moons.
To each cut, add 2 pieces of the onion, the bacon chopped into smaller pieces and the tomato sliced into half-moons.
Season with the salt, a pinch of black pepper, the Italian seasoning and set aside.
Now, chop half a cabbage into very thin strips.
Transfer the meat to a baking tray and spread the cabbage around the meat.
Season the cabbage with the salt and add the water.
Take it to a preheated oven at 180° C (350° F) and let it roast for 35 minutes.
In a small bowl, add the olive oil, the sweet paprika, the sugar, a pinch of black pepper, the garlic powder, the salt and mix very well until combined.
Once the meat has roasted, brush the sauce we prepared all over it and return it to the oven until golden brown.
Serve.
