Egg Mixture
Into a bowl, start by adding the tomato chopped into dices, add the onion chopped into dices and the red bell pepper also chopped into dices. Add the salt and mix it all together very well.
Into another bowl, add the eggs, the salt, and the black pepper. Mix very well until combined. Once that's done, set aside.
Into a skillet, add a drizzle of olive oil and spread it well, add the slices of ham and let them fry for 5 minutes. Flip the slices and fry the other side for 2 minutes.
Arrange the slices so that they are next to each other, in a straight line.
Add that egg mixture we’ve prepared next the slices and let it all fry for 2 minutes.
After that, add the tomatoes on top of the ham slices then add 100g of shredded mozzarella cheese all over it.
Now top it all with the tortilla dough and using a plate, flip the omelet, leaving the tortilla at the bottom.
Now, add the rest of the shredded mozzarella cheese and fold the omelet.
Let the cheese melt and help yourself.
