Cabbage
Start by cutting the piece of pork loin - use an oven rack as a guide and make shallow cuts on the meat.
Next, place the oven rack we used on top of a pan filled with boiling water.
Now, drizzle the meat with the Coca-Cola as it rests over the pan.
Place the meat on the rack and let it cook for 5 minutes.
After this time has passed, remove the meat from the water.
Season with the salt, a pinch of black pepper, a pinch of chimichurri and spread these seasonings well.
Then, stuff the cuts we made on the meat with the onion sliced into strips, the bacon sliced into smaller pieces and the tomato sliced into strips.
In a small bowl, add the crushed garlic cloves, the salt, the black pepper, the chimichurri, the sweet paprika, the olive oil and mix everything very well until combined.
Transfer the meat to a large baking tray and brush it with the mixture we prepared.
Add the cabbage chopped into thin strips around the meat.
Season the cabbage with a pinch of salt, a pinch of black pepper and a drizzle of olive oil.
Take the baking tray to a preheated oven at 180° C (350° F) and let everything bake for 40 minutes.
Serve.
