Start by cutting the outer layer of the onions down to the middle.
Separate the layers and set aside.
Next, cut the pork loin into thin steaks.
Take 1 of these steaks, cover it with plastic wrap and beat it well with a meat mallet.
Repeat this process with all the steaks.
Now, take 2 slices of bacon, arrange them in a cross shape and place 1 of the pork loin steaks at the center of the cross.
Season with a pinch of salt and a pinch of black pepper.
Add 20g of grated mozzarella cheese, 1 cube of cheddar cheese and close by shaping everything into a bundle.
Repeat this process with all the meat.
Then, place these bundles into the onion layers.
Now, secure the onions with a barbecue skewer, piercing 3 of them with each skewer.
Transfer everything to a baking tray, take to a preheated oven at 180° C (350° F) and bake for 40 minutes.
Serve.
