Into a bowl, add a pinch of salt, the egg, the sugar, the vanilla essence, mix very well until combined. Then add the lemon zest and the butter, mix again until combined.
Add the oil and mix, add the cornstarch and the baking powder, mix again.
Add the wheat flour and mix, if you can't mix with the spatula, use your hands and mix until a dough is formed.
Get a portion of dough and round it by hand into a cone shape. Then with a fork, press them down to make some lines. Transfer cookies to a nonstick baking sheet, or grease it with some oil.
Repeat this process with the rest of the dough.
Bake in a preheated oven at 170°C (338°F) for 15 to 20 minutes.
Note.: Baking time may vary depending on the power of your oven.
After the cookies have baked through, melt the chocolate and dip the tips of the cookies in it, them coat them in grated coconut. Repeat with all cookies.
