Start by cutting a piece of beef into thick steaks then into cubes.
Transfer all this meat to a bowl or to a plastic bottle with the top cut off.
Add the sparkling water and let the meat soak for 20 minutes.
After this time has passed, drain all the water and set the meat aside.
In a large saucepan over medium to low heat, add the butter and stir until melted.
Add a drizzle of vegetable oil and stir to combine.
Then, add all the meat and sauté until golden brown.
Remove the meat and set it aside.
In that same pan, add the onion cut into round slices, the cloves of garlic cut into smaller pieces and sauté until the onion wilts.
Add the fresh mushrooms, the bacon cut into smaller pieces and sauté for another 3 minutes.
Season with the salt, a pinch of black pepper, the sweet paprika, the mustard and the soy sauce.
Add the water, the meat we prepared and stir everything to combine.
Cover the pan and let everything cook for 25 minutes.
After this time has passed, dissolve the cornstarch in the water.
Add it to the beef stew and mix everything very well until it thickens.
Finish by adding green onions to taste.
Serve.
