Different Chickpea Salad

Start by putting the chickpeas in a saucepan, cover them with water and let them soak for 8 hours.After this indicated time, bring to a boil over medium heat and heat up until foamy.When that happens, remove all the foam with a spoon.Let them cook for about 2 hours with the lid off.After that, turn off the heat, drain all the water and set aside.Cut the red onion into small cubes, cut the pickled cucumbers and the red bell pepper also into small cubes.In a skillet, add 1 drizzle of olive oil and the bell pepper, stir-fry for 2 minutes.In a bowl, add the olive oil, the honey, the lime, mix well.Transfer the chickpeas to a large bowl, add the pickled cucumbers, the pepper, the onion, the chives and the parsley finely chopped. Finally, add salt to taste and the dressing we made, mix all the ingredients very well.Serve.

  • 4 Pickled Cucumbers 
  • ½ Red Bell Pepper
  • 2 Tablespoons of Olive Oil 
  • 1 Tablespoon of Honey 
  • Juice of ½ Lime
  • 1 Bunch of Chives
  • 1 Bunch of Parsley 
  • Salt to Taste
