Start by placing the lemons into a skillet over medium heat with hot water and cook them for 3 minutes.
After this time has passed, remove them from the hot water and transfer them to a large bowl.
Add cold water, the baking soda and wash them thoroughly.
Next, cut them in half, remove the pulp, cut them into strips then into smaller pieces.
Repeat this process with all the lemons.
Transfer everything to a large pot, add the granulated sugar, mix everything very well to combine and let it all soak for 2 hours.
After this time has passed, place the pot over medium heat.
Add the water, stir everything very well and let it all cook for 30 minutes.
Remove it from heat and let it all cool until it reaches room temperature.
Then store the candied lemon slices in mason jars.
Serve.
