Start by making slits along the top of the chicken breasts, make sure not to cut them all the way through.
In a bowl place the salt, the sweet paprika, the black pepper, the dried parsley and the oil, mix very well with a spoon and set aside.
Transfer the chicken breasts to a baking dish, then spread the seasoning sauce we've just made all over them. Set aside.
Cut a block of mozzarella cheese into slices. I've cut 10 slices, but that's to taste. Also cut the tomato into 5 round slices then cut these slices in half.
Fill each slit in the chicken with cheese and tomato slices.
Bake in a preheated oven at 200°C (392°F) for 40 minutes.
Serve.
