Into a blender, add the eggs, the whole milk, the oil, the sugar and the salt, blend for 1 minute. Turn off the blender and add the 2 cups of flaked corn flour, blend again until combined. Add 50g of grated coconut and the baking powder, mix well.
Pour the batter into a ring cake tin (don't need to grease it) and bake in a preheated oven at 180°C (356°F).
Bake for 45 minutes to 1 hour.
