Simple Coconut Corn Cake

Into a blender, add the eggs, the whole milk, the oil, the sugar and the salt, blend for 1 minute. Turn off the blender and add the 2 cups of flaked corn flour, blend again until combined. Add 50g of grated coconut and the baking powder, mix well.Pour the batter into a ring cake tin (don't need to grease it) and bake in a preheated oven at 180°C (356°F).Bake for 45 minutes to 1 hour.

  • 300ml of Whole Milk
  • 150ml of Oil
  • 1 Cup of Sugar 
  • 1 Teaspoon of Salt
  • 50g of Grated Coconut
  • 1 Tablespoon Baking Powder
  • 2 Cups of Flaked Corn Flour
