In a large skillet, add a drizzle of olive oil, the rice and mix.
Add the warm water and bring it to a boil.
Next, add the salt, cover the skillet and let everything cook until the water fully evaporates.
In a small bowl, add the eggs, separate the yolks from the whites and set the egg whites aside.
Beat the egg yolks very well and set aside.
In a medium bowl, add the egg whites we set aside and using a mixer, beat everything very well until it stiff peaks form.
When the rice has cooked through, pour in the beaten egg yolks we prepared earlier and stir everything very well over low heat for 5 minutes.
Then, add the beaten egg whites, spread evenly and stir everything gently for 3 minutes.
Serve.
