Stir-Fry
To Assemble
Start by cutting the pork loin into thick steaks.
Cover these steaks with a plastic bag and pound them very well using a meat mallet.
Season them with one pinch of salt, one pinch of black pepper, rub these spices on the steaks, flip them, repeat the same process on the other side and set aside.
In a large skillet over medium-low heat, add one drizzle of vegetable oil.
Add the onion chopped into small cubes, the grated carrot and stir-fry for 3 minutes.
Next, add the red and yellow bell peppers chopped into small cubes, the cherry tomatoes chopped into smaller pieces, one pinch of salt, the sweet paprika, the oregano, stir-fry for another 3 minutes and set aside.
Now, place ½ teaspoon of butter on each steak and spread it evenly.
Place one tablespoon of the stir-fry we made on each steak and roll them up.
Next, wrap these steak rolls in 2 strips of smoked bacon and secure them with toothpicks.
In a large skillet over medium-low heat, add all these rolls and fry them until slightly golden brown on all sides, remove the toothpicks and set aside.
In a medium baking dish, add half of the stir-fry we prepared earlier and spread it evenly until flat.
Add the fried pork rolls wrapped in bacon and top each of them with the rest of the stir-fry.
Take them to a preheated oven at 180° C (350° F) and let it all bake for thirty minutes.
Serve.
