Start by adding the peeled potatoes in a large saucepan.
Add enough water to fully cover them and add the salt.
Turn the heat to high and let them cook for 20 minutes.
After this indicated time, drain all the water from the potatoes and set them aside.
In a large skillet over medium-low heat, add the unsalted butter and stir until melted.
Add one drizzle of olive oil, one pinch of black pepper, the salt, the sweet paprika, the crushed garlic cloves and stir until the garlic is slightly golden brown.
Next, add the boiled potatoes and stir for another 5 minutes.
Add parsley to taste and stir until incorporated.
Finish by adding the grated mozzarella, cover the skillet and let it all cook for 5 minutes.
Serve.
