Start by grating all the zucchinis and transfer to a bowl, add the salt, mix well and let it rest for 10 minutes.
Grate the potatoes and squeeze well to remove the excess water. Set aside.
Into a bowl, add the eggs, the oil and mix well. After that, add the wheat flour, the baking powder, mix again.
Now get all the zucchini and squeeze well, to remove the excess water.
Transfer all the zucchini to the bowl with the egg mixture, add the grated potatoes, parsley to taste, chives to taste, the sweet paprika and the salt, mix well until combined.
Now into a baking sheet lined with nonstick baking paper, add a generous drizzle of olive oil and spread it out well with a brush.
Pour in all the mixture we made and evenly spread it.
Finally, evenly distribute the mozzarella cheese cut into small pieces all over the mixture.
Bake in a preheated oven at 180°C (356°F) for 1 hour.
Serve.
