Kabocha Squash with Sausage

Start by chopping the Kabocha squash into dices and put them into a saucepan. Add the Tuscan sausage and enough water to cover all ingredients. Finally, add the granulated sugar, close the saucepan, and let it all cook over high heat for 10 minutes.After this time, sausages have cooked through. Remove only the sausages from the pan and set them aside. Let the Kabocha squash cook for another 5 minutes. After this indicated time, remove the Kabocha as well.Drain all the water from the pan, transfer squash to a bowl and add ½ teaspoon of sugar. Mix it all together very well and set aside.Once you’ve done that, get the sausages and cut them in half lengthwise, then cut these halves into thin strips.Into a skillet, add a drizzle of olive oil and the chopped sausages, stir them well until browned.Add the onion finely chopped into strips and mix well.Add the crushed garlic cloves and mix well again.After that, add both the yellow pepper and the tomato chopped into dices, mix very well until the tomato starts to break down.Season with black pepper, oregano, and chimichurri, mix well.Add the mayonnaise and mix well again.Add all the squash we’ve set aside, add the chives and parsley to taste, mix very well.Turn off the heat and help yourself.

  • 2 Crushed Garlic Cloves
  • ½ Yellow Bell Pepper
  • 1 Medium Tomato
  • Generous Pinch of Black Pepper
  • ½ Teaspoon of Oregano
  • ½ Teaspoon of Chimichurri
  • 3 Tablespoons of Mayonnaise
  • 2 Tablespoons of Chives
  • Parsley to Taste
