Egg Mixture
Start by adding 1 drizzle of olive oil in a saucepan, add the onion chopped into small cubes and the leek chopped into round slices, stir-fry well until wilted.
Season with the salt and the black pepper to taste, keep stirring.
Add the grated carrot and the grated broccoli, stir-fry for another 2 minutes and set aside.
After that, in a bowl, add the eggs and beat them well.
Add the turmeric and the salt, add the parsley & chives mix and the cooked and shredded chicken breast, mix well.
Then pour the stir-fried vegetables in the bowl and mix.
Transfer this mixture to a loaf tin lined with non-stick baking paper.
Spread the mixture all over the loaf tin.
Top with grated mozzarella cheese and sliced olives, to taste.
Take to a preheated oven at 180°C (356°F) and bake for 20 minutes.
Serve.
