Low Carb Chicken Pie

Start by adding 1 drizzle of olive oil in a saucepan, add the onion chopped into small cubes and the leek chopped into round slices, stir-fry well until wilted.Season with the salt and the black pepper to taste, keep stirring.Add the grated carrot and the grated broccoli, stir-fry for another 2 minutes and set aside.After that, in a bowl, add the eggs and beat them well.Add the turmeric and the salt, add the parsley & chives mix and the cooked and shredded chicken breast, mix well.Then pour the stir-fried vegetables in the bowl and mix.Transfer this mixture to a loaf tin lined with non-stick baking paper.Spread the mixture all over the loaf tin.Top with grated mozzarella cheese and sliced olives, to taste.Take to a preheated oven at 180°C (356°F) and bake for 20 minutes.Serve.

Ingredientes

  • 1 Medium Onion 
  • ½ Leek Stalk 
  • ½ Teaspoon of Salt 
  • Black Pepper to Taste 
  • 1 Grated Carrot

  • Mozzarella Cheese to Taste 
  • Sliced Olives to Taste 

Egg Mixture

  • 3 Eggs 
  • 1 Teaspoon of Turmeric 
  • ½ Teaspoon of Salt 
  • 1 Tablespoon of Parsley & Chives Mix 
  • 1 Cup of Shredded Chicken Breast (240ml)
