In a bowl, add the eggs, salt to taste, the black pepper and the sweet paprika, mix all the ingredients together very well until combined.
Add the onion and the tomato chopped into small cubes, mix once again.
In a skillet, add the butter and stir until melted.
Pour in the egg mixture we made.
Dip 2 slices of bread in this egg mixture and let it all fry until the surface of the egg mixture is set and cooked.
Once you’ve done that, flip and fold the edges of the omelet over the bread slices, add the grated mozzarella cheese, the ham, the cheddar cheese and fold one bread slice on top of the other. Let it all fry for another minute on each side.
Serve.
