Start by removing the bones from the salmon, then remove the skin and cut it into smaller pieces.
Season with a pinch of salt, a pinch of black pepper and spread well.
In a large skillet over medium to low heat, add a drizzle of olive oil.
Add the pieces of salmon and fry for 1 minute on each side.
Remove from the heat and set aside.
In the same skillet, add the garlic cloves and fry until golden brown.
This step is just to add a rich garlic flavor to the oil.
Add the heavy cream, the salt, the Italian seasoning, the lemon zest and stir until combined.
Then, add the spinach leaves and sauté for 3 minutes.
Add the grated parmesan cheese and stir until the cheese melts completely.
Add the pieces of salmon we prepared earlier, cover the skillet and let everything cook for 10 minutes.
Serve.
