In a bowl, start by putting the wheat flour, add the dry yeast, the sugar, the salt and the vanilla powder, mix it all together very well.
Add the egg and the warm milk, mix again until combined and when you can no longer mix with the spatula, use your hands, knead for about 5 minutes.
Once you’ve done that, cover the bowl with plastic wrap and let it rise for about 1 hour.
After the indicated time, sprinkle some flour on the table and place the dough, flatten it into a round shape, not too thick nor too thin.
Cut the apples into thin slices and place them over the dough - arrange them in rows.
Roll the dough into a log shape. When you’re about to finish rolling, brush the end of the dough with some water, to make both ends stick together.
After that, cut the log into 1-2 finger-thick round slices.
Transfer these round slices to a baking tray lined with parchment paper
Cover the tray with a tablecloth and let dough rest for about 20-25 minutes.
Mix the yolks with the milk and brush this mixture over the slices.
Take them to a preheated oven at 180°C (356°F) for about 30 minutes.
To finish it off, while still hot, brush some unsalted butter over the mini pies and sprinkle some icing sugar, to taste.
Serve.
