Semolina Coconut Cookies

Into a bowl, start by adding the oil, the egg, the dry grated coconut, the semolina, the yogurt, the baking powder and finally, the vanilla essence. With a spoon or spatula, mix very well until combined.Once you've mixed, add the wheat flour, mix again until you can no longer mix with the spoon. Mix by hand until it fully combines and a dough is formed.Split the dough into 4 equal-sized pieces. Get one of these pieces and roll into a log shape.Get a fork and press it down on the dough, making lines. Then cut this dough log into 12 equal-sized pieces.Put some semolina flour on a plate or bowl and coat these cookies in it.Repeat this process with all cookies.Transfer these cookies to a baking sheet and bake in a preheated oven at 200°C (392°F) for 30 minutes.Meanwhile, into a saucepan, add the sugar, the water and the lemon slice, mix very well and bring it to a boil. Once it starts to boil, turn off the heat and set aside.Once the cookies have baked through, pour this mixture we've just made all over the cookies.Cover the baking sheet and set aside for 1 hour.Finally, sprinkle some grated coconut over each cookie, but that's totally optional.Unmold and serve.

  • 90ml of Oil

  • 500ml of Water
  • 1 Slice of Lemon
