Start by cutting the tips off 3 medium zucchinis and grating them.
Also grate the red onion.
Now, in a bowl, add the grated zucchini, the red onion and season with salt, mix well and let the mixture rest for 15 minutes.
After this indicated time, drain all the water from the zucchini mixture by passing it through a fine mesh sieve.
Next, transfer all the mixture to a bowl, add the egg, the cream cheese, the breadcrumbs, the parmesan cheese, chives to taste and the black pepper, mix all the ingredients very well until combined.
After that, get a portion of this mixture and shape it into a ball.
Repeat this process until all the mixture has been used.
Transfer to a baking sheet lined with nonstick baking paper, gently flattening each ball.
Take to a preheated oven at 180°C (356°F) and bake for 30 minutes.
