Sauce
Chop the broccoli and into a saucepan filled with boiling water, add the salt and the milk, cook the broccoli florets for 10 minutes or until you stick a fork and feel they have cooked through.
Chop the red pepper, the green pepper and the onion into strips, and in a pan with some oil, stir these strips until slightly soft.
Into a baking dish, add some oil and spread well, greasing the bottom and the sides.
Transfer all the broccoli to the baking dish as well as the sauteed onions and peppers, spread well. Set aside.
To make the sauce, in a bowl, place the eggs and beat them, add the milk, the oil, the wheat flour, the salt, the baking powder and the parsley, mix it all together very well until combined.
Pour this mixture all over the vegetables in the baking dish, gently mix.
Top it with the mozzarella cheese and bake in a preheated oven at 200°C (392°F) for 25 minutes.
Serve.

very good! would leave broccoli in the pan a bit longer after draining to let excess moisture evaporate, amd wouldn’t boil them so long, as the end result had very mushy broccoli. the topping was perfect!
