Start by adding the milk to a large saucepan, bring it to a boil.
Once it begins to boil, squeeze out the lime juice and keep stirring until the whey has been fully released from the curd.
After that, add the salt and keep stirring until incorporated.
Using a fine sieve, collect all the curd from the saucepan and transfer it to a bowl lined with a cloth sieve or a tablecloth, just like shown in the video.
Then squeeze this curd well to remove the excess liquid.
Transfer all the curd to a little round pot and arrange until flat.
Cover this pot, take it to the fridge and let it chill for at least 2 hours.
After this indicated time, you may remove the cheese from the pot.
Serve.
