For Cooking the Pasta
In a large bowl, add the bunches of parsley, the eggs, the water and using a hand blender, beat everything very well until smooth.
Add the wheat flour and mix.
When you can no longer mix with the spoon, knead with your hands until you have a smooth, uniform dough.
Then, cover with a cloth and let it rest for 15 minutes.
In a large skillet over medium to low heat, add a drizzle of olive oil.
Add the onion chopped into cubes and sauté until slightly golden brown.
Add the ground beef and sauté until the water evaporates completely.
Next, add the tomato chopped into cubes.
Season with the salt, a pinch of black pepper, the sweet paprika and the garlic powder.
Sauté for another 2 minutes and set aside.
After the dough has rested, transfer it to a countertop, divide it into 2 equal parts and shape into a ball.
Take one of them and shape it into a rectangle; make sure you stretch it out until thin using a rolling pin.
Then, sprinkle some wheat flour, spread it well and roll it up.
Then, using a knife, cut into thin strips and unroll these dough strips.
In a large saucepan over medium heat, bring the water to a boil.
Add the salt, the dough strips we prepared and let them cook for 10 minutes.
After this time has passed, drain all the water and transfer the pasta to a nice serving plate.
Finish with grated parmesan cheese to taste and add the meat we prepared earlier.
Serve.
