In a bowl, start by adding the oat flakes and the very hot water, mix and set aside, let it hydrate for 10 minutes.
After this indicated time, add the eggs and the plain yogurt, mix well.
Add the powdered sweetener and mix again.
Add the melted unsalted butter and mix.
Once you’ve done that, add the walnuts, the salt, the grated coconut and the vanilla essence, mix again.
Now, add the baking powder and mix gently.
Finally, add the blueberries and mix.
Once you’ve done that, grease a nonstick baking tin with plenty of unsalted margarine. The baking tin I’m using is 22cm x 11cm.
Transfer all the batter to the baking tin and spread evenly.
Take to a preheated oven at 180°C (356°F) and bake for 45 minutes.
Serve.
