Start by slicing the pork meat into 4 pieces and set aside.
Into a bowl, add the salt, the sweet paprika, the chili flakes and the chimichurri, mix very well.
After that, get the pieces of meat and coat them in the spice mixture, coat every side and set aside.
Now into a screw-lid glass jar, add some peppercorn, but that’s entirely to taste. Add 2 pieces of the meat we’ve seasoned, 1 bay leave and the garlic cloves cut in half.
Close the jar tightly and repeat this process into another jar.
Once you’ve done that, transfer the jars to a large pot lined with a tablecloth at the bottom and add water all the way to the top of the pot.
Cover the pot and let it all cook over low heat for 3 hours.
After this indicated time, turn off the heat and let the jars cool a bit.
Serve.
