Slice a medium potato into very thin round slices, these slices can't be thick.
Grease a skillet with butter or margarine, add the potato slices and arrange them in a circle, covering the whole bottom of the skillet. Cover the skillet and cook for about 5 minutes.
Chop the mozzarella cheese into dices, put them in a bowl and set aside.
In another bowl, put the eggs and the salt, whisk well and set aside.
After the indicated time, open the skillet and add the mozzarella dices, spreading them well. Also add the eggs we've just whisked, spread well. Add the dried parsley and cook for another 5 minutes.
Take it out of the skillet and serve.
