Into a saucepan, start by adding the milk, bring to a medium heat and let it heat up well.
When it is hot enough, add the lemon juice and mix.
You’ll notice that it will start to curdle and when it does, add the salt and mix again for 1 minute.
Once it has really curdled, get a sieve to separate the liquid bit from the solid bit.
Pour this solid bit into a blender or food processor, add the unsalted butter and blend it all together until a smooth and uniform cream is formed.
Transfer the cream to a saucepan and add the mozzarella cheese cut into dices. Over low heat, mix it all together very well until the cheese melts.
When that happens, turn off the heat and transfer all this cream to a mold, press down on it to make it as flat as possible.
Take to the fridge and leave for at least 3 hours.
After this indicated time, unmold and serve.
