Put the bacon in a pan and stir until it starts to release its own grease, add the onion and sauté until translucent, add the garlic and sauté. Add the skinless sausage and stir until the sausage starts to brown lightly.
Add the tomato and parsley, stir until the tomato water dries up, set aside.
Into a bowl, add the eggs and whisk them, add the flour and mix until a smooth and uniform mixture starts to form, add the baking powder and mix. Add the mozzarella, the corn and the sausage with bacon we've set aside, mix very well, add some more parsley and mix again.
Grease a baking dish with butter and flour, pour the omelet into this dish and bake in a preheated oven at 180°C (356°F) for 45 to 60 minutes.
