Hot sauce
Start by peeling the green bananas, cut off the ends, make a cut in the middle and remove the peel.
In a large bowl, add the water, the baking soda, the bananas that we peeled, mix and let them soak for 10 minutes.
After this time has passed, drain all the water and set aside.
In a large skillet over medium to low heat, add enough vegetable oil to cover the bottom and let it heat up.
Add the bananas and fry them for 1 minute.
After that time has passed, remove from the skillet and let them cool until they reach room temperature.
Next, place a piece of plastic wrap on top of a cutting board.
Add one of the bananas that we fried, wrap it in the plastic and mash it.
Repeat this process with all the bananas.
In another skillet over medium to low heat filled with hot vegetable oil, add the mashed bananas and fry them until golden brown.
Remove them from the skillet and set them aside on a plate with paper towels.
In a large skillet over medium to low heat, add a drizzle of olive oil.
Add the cloves of garlic, the small red onion chopped into smaller pieces, the red chili peppers, the orange peppers, the green peppers, the ripe tomato chopped into slices and sauté everything for 5 minutes.
Next, transfer everything to a mortar, add the heavy cream, the brown sugar, the salt and mash everything very well until it becomes a smooth paste.
Serve.
