Peel off the ripe bananas, I used plantains for this recipe.
Cut them into slices and transfer them to a saucepan, add enough water to fully cover them, add the salt, turn on the heat to medium power and cook for 20 minutes.
After this indicated time, drain all the water and transfer them to a bowl, mash well and add the butter, keep mashing until mushy.
Place a large piece of plastic wrap on a table and brush some olive oil on it, add all the banana mash and spread it out well until flat and smooth.
Once you’ve done that, cover it with 100g of sliced mozzarella cheese, add the slices of ham and the rest of the cheese.
Roll the mixture over the filling using the plastic wrap as a support, then seal it well.
Spread some olive oil on a piece of aluminum foil and transfer the banana roll to it. Wrap it tightly with the foil, sealing the ends well.
Transfer it to a large baking dish and bake in a preheated oven at 180°C (356°F) for about 30 minutes.
Serve.
