Start by inserting toothpicks into the chicken breast and transfer it to a medium baking dish.
Pour the unsalted butter over everything then remove it from the butter.
Next, remove the toothpicks and cut the chicken breast in half.
Add 1 egg yolk and spread it over the entire chicken.
Then, fill it with 2 slices of cheddar cheese, 2 slices of mozzarella cheese and fold it in half.
Add 1 more egg yolk and spread it.
Next, add 1 more slice of cheddar cheese and 1 more slice of mozzarella cheese.
Flip the chicken and repeat the same process on the other side.
Now bread the chicken by first coating it in wheat flour, then dip it in beaten eggs and coat it in panko breadcrumbs.
In a large skillet over medium to low heat with hot vegetable oil, add the chicken and fry it until golden brown.
Remove it from the hot oil and drain the excess grease on a plate lined with paper towels.
In a large skillet over medium to low heat, add the butter and stir until melted.
Add the wheat flour and stir until it forms an even mixture.
Next, gradually add the milk and keep stirring until it becomes a smooth and even cream.
Season with the salt, the black pepper, the nutmeg and stir.
Add the grated Parmesan cheese and stir until melted.
Serve the chicken with the sauce we prepared.
