For Breading
Start by removing the crust from the slices of bread.
Next, fill a large skillet over medium heat with boiling water and bring it to a boil.
Add a steamer rack and the crustless bread slices we prepared.
Cover the skillet and let everything cook for 1 minute.
Remove these bread slices from the heat and set aside.
In a large bowl, add the cooked and mashed potatoes, the shredded chicken breast, the sweet corn, the mayonnaise, the ketchup, the salt, the black pepper, the chimichurri and mix everything very well to incorporate the seasoning.
Next, flatten the bread slices using a rolling pin.
Add one teaspoon of the filling we prepared and close the bread by folding it just like shown in the video.
Repeat this process with all the slices and the filling.
In a medium bowl, add the eggs, the milk and whisk very well until combined.
In another medium bowl, add the breadcrumbs.
Now, bread the snacks we prepared – first, dip them in the milk and egg mixture, then coat them in the breadcrumbs.
In a large skillet over medium to low heat, add the vegetable oil and let it heat up.
When that happens, add the snacks and fry them until golden brown.
Serve.
