Start by cutting the broccoli head into florets, transfer them to a bowl, cover with very hot water and let them soak for 5 minutes.
After this indicated time, drain all the water, and chop the florets into small bits.
Also chop the onion into small cubes and set aside.
In a bowl, add the eggs, the salt, and the black pepper, mix well.
In another bowl, add all the chopped broccoli, the beaten eggs, chives to taste, the onion cubes, the grated cheese, one pinch of salt, one pinch of black pepper and mix all the ingredients together very well.
Once you’ve done that, in a skillet, add one drizzle of olive oil, pour in all the broccoli omelet, and let it fry for 5 minutes.
After this indicated time, flip it using a plate, and fry on the other side for another 3 minutes.
Serve.
