Start by cutting the oranges in half, in half again and in half one more time, then separate the orange flesh from the peel.
For this recipe we will only be using the peel, but you can make a nice juice with the orange flesh.
Then, cut the peel in half once more and remove all the white part.
Transfer all the peels to a medium baking dish, add enough water to cover everything and mix well.
Cover with plastic wrap and leave to soak for at least 12 hours to get the bitterness out of the orange peel.
After this time has passed, drain all the water and transfer all the peels to a large saucepan.
Add enough water to cover everything, turn on the heat and set it to medium-low power, cover the pan and let everything simmer for 10 minutes.
After this time has passed, drain all the cooking water and transfer everything back to the pan over medium to low heat.
Add the sugar, and constantly stir everything very well for a few minutes until the sugar melts and starts to crystallize again coating the orange peels.
Transfer everything to a bowl and let it cool until it reaches room temperature.
Serve.
