Start by cutting the sweet bread rolls into slices and set aside.
In a small bowl, add the scoops of vanilla ice cream.
Microwave them for 30 seconds at maximum power or until completely melted.
Dip the sliced rolls in it and spread the ice cream evenly, and make sure to drain off any excess ice cream before removing them from the bowl.
Repeat this process with all the bread slices.
In a large skillet over medium to low heat, add the unsalted butter and stir until completely melted.
Add the sliced rolls we prepared and fry them until golden brown on both sides.
Remove them from the skillet and set aside on a plate lined with paper towels.
Then, in a medium bowl, add the refined sugar, the ground cinnamon and mix everything very well until combined.
Coat all the French toast bites in this mixture.
Finish by serving with honey to taste.
